But for the truly inspired gourmands and culinary enthusiasts - witnessing the preparations of the rich Indian foods, is truly a gratifying experience. India is definitely the Mistress of Spices. Cuisine is regional, ancient, subtle, fiery and ultimately unforgettable. Flavours are as varied as the climate. Spices from the Four corners of the country can be fragrant or pungent and sometimes just therapeutic. These spices are then blended in meticulous proportions in accordance to cooking tenets that are possibly centuries old. The use of these spices again can vary from region to region and it is this, which so sharply distinguishes and categories the food into its geographical divisions.

The architectural wonders of Delhi and Agra are as amazing as the food from the Northern region which traces its descent from persian cuisine. It is the Mughal who introduced the aromatic pilafs and biryanis. The spicy kormas and koftas were created for the tables of Emperors.

The royalty in Rajasthan is evident in the splendid forts and Palaces of Jaipur where again the cuisine is very special and exclusive to this region.

A visit to Chennai and Cochin leaves one with an everlasting impact of the numerous temples in Tamil Nadu and the serene natural beauty of Kerala. The regional, mostly vagetatarian, food which is served on Banana leaves is actually a bonus. The ubiquitous idlis and dosas also originated here.

The leisurely & carefree of Goa with its serene beaches is in striking contrast to the hustle and bustle of Mumbai which is a true megapolis. The sea food in Goa is certainly something worth waiting for as it is unmatched in its flavors and presentation.

Visiting the Ajanta and Ellora Caves near Aurangabad & the Ghats of Varanasi is once in a lifetime experience, even for the most seasoned travelers.

DAY 1 Arrival Delhi
Transfer to your hotel for immediate Occupancy. Morning free. Breakfast at hotel. Afternoon - a combined sightseeing tour of New Delhi and Old Delhi. We recommend a drive through the prestigious streets of Diplomatic Enclave to India Gate, Rastrapati Bhawan and the Qutub Minar (one of the most perfect towers of the Persian world). In Old Delhi, visit Red Fort, Jama Masjid (the largest mosque in India) and Raj Ghat (memorial of Mahatma Gandhi). Also visit the Craft Museum. Wazwan dinner (Kashmiri cuisine) at Chore Bizzare.

DAY 2 Delhi
After breakfast walking tour.Chole-bhature lunch at Kwality restaurant. Afternoon free for independent activities. Dinner at Moti Mahal with qawali.

DAY 3 Delhi-Agra
Morning transfer from hotel to the railway station in time to board Shatabdi Express to Agra. Start with city tour of Agra. Visit to Taj Mahal. After lunch, visit to Agra Fort. Also included a visit to local bazaars. Special biryan and Kabab dinner at a local restaurant.

DAY 4 Agra - Jaipur
Breakfast at hotel. Journey to Agra (221 kms / 6 hours) via Fatehpur Sikri. Later on transfer to hotel. Also en route visit Keoladeo Ghana Bird Sanctuary. Rickshaw ride for bird watching. Lunch at Laxmi Vilas Palace Bharatpur.

DAY 5 Jaipur
After breakfast visit the Amber Fort on elephant back. Cooking demo with lunch at a private residence. Afternoon - city tour of Jaipur with visit to Hawa Mahal, Jantar Mantar and the City Palace (the royal residence built in a blend of Rajasthani and Mughal styles). Dinner at Choki Dhani which offers a variety of Rajasthani cuisine.

DAY 6 Jaipur-Mumbai-Chennai
Breakfast at the hotel. Morning transfer from hotel to airport to board flight to Mumbai. Assistance at airport and drive past the city of Mumbai doing a short sightseeing tour. Lunch at local restaurant (Parsi food). After lunch transfer back to the airport in time to board flight for Chennai. Upon arrival transfer to hotel.

DAY 7 Chennai
Breakfast at hotel. Morning - city tour. Lunch at hotel Saravana Bhavan (veg. restaurant). After lunch visit to Kanjivaram Silk Wedding Sari Shop, Pillayar Koil temple and the adjoining flower market and stainless steel vessels shop. Dinner - South Indian feast with Chettinad specialties at Karaikudi on banana leaves accompanied by local folk music in the background.

DAY 8 Chennai
Breakfast at hotel. Morning - excursion to Mahablipuram (An ancient coastal port, south of Chennai, world famous for its shore temple). Lunch at hotel Temple Bay. After lunch visit to Cholamandal Artist's colony, antique books and art shops.

DAY 9 Chennai - Cochin
Breakfast at hotel. Morning free for independent activities. Afternoon transfer from hotel to airport in time to board flight to Cochin. Assistance at the airport and transfer to hotel. This city is a magical blend where you can see the oldest church in India, 500 years old Portuguese houses, the cantilevered Chinese Fishing nets, Jewish Synagogue and the Palace built by the Portuguese. Evening, witness a Kathakali dance performance, performed by various artists at a local theatre. Sea food dinner at the hotel.

DAY 10 Cochin
After breakfast, drive to Kuthiathode (38 Kms) to enjoy country boat ride through the narrow canals. Arrive back to hotel during lunch time. Lunch & cooking demonstration at Panthal Restaurant (Casino Group)- MG Road. In the afternoon, we begin our tour from the Jewish synagogue. Later, visit the "Dutch Palace" with its wonderful murals depicting the entire story of the Ramayana. Proceed to see the St Francis Church, the first European Church built in India.

DAY 11 Cochin
Full day visit to a Coffee Plantation with lunch.

DAY 12 Cochin-Mumbai-Goa
Breakfast at hotel. Morning transfer from hotel to airport in time to board flight to Mumbai. Connect flight to Goa. Reception at airport and transfer to hotel. Few of the famous beautiful beaches of Goa are Calangute, Colva, Baga, Dona Paula, Bogmalo. Rest of the day at leisure.

DAY 13 Goa
Goan breakfast "Fejoda and Sanna" at hotel. Morning visit local farmers market. Lunch & cooking demonstration at a Goan home of vindaloo /sorpotel.Sunset cruise on Mandovi River. Special seafood dinner at a local restaurant.

DAY 14 Goa-Mumbai
Goa Sausage and Pao breakfast at hotel. Morning visit Toddy tapping/Fenny Factory. Afternoon transfer from hotel to airport in time to board flight to Mumbai. Reception at airport and transfer to hotel. Day at leisure. Dinner at the famous Khyber restaurant.

DAY 15 Mumbai
After breakfast, we will visit Spice market (at Crawford market). Lunch at Rajdhani Restaurant (Gujrati Vegetarian/Jain Thali) . In the afternoon visit Mumbai's famous Tangam Philips Catering School and the Bollywood Studios, India's Hollywood known for making more movies per year than the entire world put together. Alternate visit to the antique market bookstores and Jahangir Art Gallery. Dinner at Kailash Parbat Restaurant (Sindhi Specialist).

DAY 16 Mumbai - Aurangabad
Breakfast at hotel. Morning transfer from hotel to airport in time to board flight to Aurangabad. Reception upon arrival and transfer to hotel. After lunch, we will visit the extraordinary cave temples of Ellora.

DAY 17 Aurangabad
Breakfast at hotel.Today we have a full day excursion to Ajanta Caves. Return to Aurangabad en route visiting a Sugar Factory. Dinner at hotel.

DAY 18 Aurangabad-Delhi
After breakfast, we will visit the city of Aurangabad.Tea/coffee at an Indian Home with some cooking demonstration. Afternoon transfer from hotel to airport in time to board the flight to Delhi. Reception upon arrival and transfer to hotel.

DAY 19 Delhi - Varanasi
Breakfast at hotel. Morning transfer from hotel to airport in time to board flight to Varanasi. Reception upon arrival and transfer from airport to the hotel. Afternoon excursion to Sarnath. Special vegetarian dinner at a local restaurant.

DAY 20 Varanasi - Delhi
Early morning take a boat ride on the most sacred river of India - the Ganga. After breakfast, sightseeing tour of Varanasi, visit the numerous temples. You will be able to walk through narrow lanes and stop by at the bazaars to have a look at, among other things, the world famous Banaras silks. Also visit Yoga Centre and the Benaras Silk Emporium. Afternoon transfer from hotel to airport in time to board flight to Delhi. Reception upon arrival and transfer from airport to hotel. Special farewell dinner with live Indian dances performance. Later transfer to international airport. Departure Delhi.
